Description

Healthy vegan snacks featuring chocolate date energy balls packed with natural ingredients. These plant-based treats provide sustained energy while satisfying sweet cravings with wholesome, guilt-free ingredients.


Ingredients

Scale

1 1/2 cups pitted Medjool dates

1 cup raw almonds

1/2 cup raw walnuts

3 tablespoons unsweetened cocoa powder

2 tablespoons chia seeds

1 teaspoon vanilla extract

1/4 teaspoon sea salt

1/4 cup unsweetened shredded coconut

2 tablespoons coconut oil, melted

Additional coconut for rolling


Instructions

Soak dates in warm water for 10 minutes if very dry

Process almonds and walnuts in food processor until roughly chopped

Add drained dates and process until paste forms

Add cocoa powder, chia seeds, vanilla, and salt

Process until well combined and mixture holds together

Add coconut and coconut oil, pulse to combine

Roll mixture into 1-inch balls using damp palms

Roll balls in additional coconut if desired

Place on parchment-lined tray

Refrigerate for 30 minutes to firm up

Store in refrigerator in airtight container

Notes

Use soft Medjool dates for best texture

Add water gradually if mixture seems too dry

Customize with different nuts and seeds

Roll in cocoa powder for chocolate coating

Store refrigerated up to 2 weeks

Freeze for longer storage up to 3 months
