Ingredients

3 large very ripe bananas, mashed

1/2 cup vanilla whey protein powder

1 1/2 cups whole wheat flour

1/2 cup plain Greek yogurt

2 large eggs

1/3 cup pure maple syrup

1/4 cup melted coconut oil

2 teaspoons vanilla extract

1 teaspoon baking soda

1/2 teaspoon sea salt

1 teaspoon cinnamon


Instructions

1. Preheat oven to 350°F and line 9×5 loaf pan with parchment paper

2. In large bowl, mash bananas until smooth

3. Whisk together protein powder, flour, baking soda, salt, and cinnamon

4. Add Greek yogurt, eggs, maple syrup, coconut oil, and vanilla to mashed bananas

5. Gently fold wet ingredients into dry ingredients until just combined

6. Pour batter into prepared loaf pan and smooth top

7. Bake 55-65 minutes until golden brown and toothpick comes out clean

8. Cool completely on wire rack before slicing

9. Store wrapped at room temperature up to 3 days or freeze sliced for 3 months

Notes

Use very ripe bananas with brown spots for best flavor and moisture
