Ingredients

Scale

4 cups old-fashioned rolled oats

1 1/2 cups mixed raw nuts (almonds, walnuts, pecans)

1/2 cup raw seeds (pumpkin, sunflower)

1/3 cup pure maple syrup

1/4 cup melted coconut oil

2 teaspoons vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon sea salt

Optional: 1/2 cup dried fruit (add after baking)

Instructions

1. Preheat oven to 325°F and line two large baking sheets with parchment paper

2. Combine oats, nuts, and seeds in large mixing bowl

3. Whisk maple syrup, melted coconut oil, vanilla, cinnamon, and salt in separate bowl

4. Pour wet ingredients over dry mixture and stir until evenly coated

5. Divide mixture between prepared baking sheets and spread in even layer

6. Press mixture lightly with spatula to encourage cluster formation

7. Bake for 20-25 minutes, stirring once halfway through cooking

8. Continue baking until golden brown and crispy throughout

9. Remove from oven and let cool completely on baking sheets

10. Break into desired cluster sizes once completely cool

11. Add dried fruit if using after granola has cooled

12. Store in airtight containers for up to 6 weeks

Notes

Use old-fashioned oats for best texture and clustering

Don’t stir during first 20 minutes of baking for larger clusters

Granola continues to crisp as it cools completely

Store in airtight containers to maintain crispness

Can be frozen for up to 6 months in sealed containers

Add dried fruit after baking to prevent burning
