Ingredients

1.5 lbs boneless chicken thighs, cut into pieces

12 oz penne pasta

1 cup heavy cream

1/2 cup sun-dried tomatoes, chopped

4 cups fresh spinach

3/4 cup grated Parmesan cheese

4 large garlic cloves, minced

1/2 cup chicken broth

2 tablespoons olive oil

2 teaspoons Italian seasoning

Salt and pepper to taste


Instructions

1. Cook pasta according to package directions minus 2 minutes, drain and set aside

2. Season chicken pieces generously with salt, pepper, and Italian seasoning

3. Heat olive oil in large skillet over medium-high heat

4. Sear chicken pieces until golden brown on all sides, about 6-8 minutes total

5. Add minced garlic and cook for 30 seconds until fragrant

6. Pour in chicken broth and scrape up any browned bits from pan bottom

7. Reduce heat to medium-low and slowly add heavy cream, stirring constantly

8. Add sun-dried tomatoes and simmer for 3-4 minutes until sauce thickens slightly

9. Stir in cooked pasta and fresh spinach until spinach wilts

10. Add Parmesan cheese and toss until melted and sauce coats pasta

11. Taste and adjust seasoning with salt and pepper as needed

12. Serve immediately while hot, garnished with extra Parmesan if desired

Notes

Chicken thighs stay more tender than breasts in this recipe

Don’t overcook pasta initially – it finishes cooking in the sauce

Keep heat low when adding cream to prevent curdling

Fresh spinach works better than frozen for this recipe

Reserve some pasta water to thin sauce if needed
