Ingredients
8 large eggs
1 cup cottage cheese
1/2 cup shredded cheese (cheddar or Swiss)
2 tablespoons heavy cream
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
2 tablespoons fresh chives, chopped
Cooking spray for greasing
Instructions
1. Preheat oven to 325°F and generously spray 12-cup muffin tin with cooking spray
2. Add eggs, cottage cheese, and heavy cream to large bowl or measuring cup
3. Blend with immersion blender until completely smooth, about 2-3 minutes
4. Stir in shredded cheese, salt, pepper, garlic powder, and fresh chives
5. Divide mixture evenly among prepared muffin cups, filling about 3/4 full
6. Bake for 18-22 minutes until set in center and lightly golden on top
