Description

Rich and creamy cottage cheese chocolate mousse with 15g protein per serving. This healthy chocolate dessert tastes like traditional mousse but provides substantial nutrition and supports fitness goals.

Ingredients

Scale

1 cup full-fat cottage cheese

3 tablespoons unsweetened cocoa powder

23 tablespoons pure maple syrup

1 teaspoon vanilla extract

2 tablespoons dark chocolate chips (optional)

1 tablespoon almond butter (optional)

Pinch of sea salt

Fresh berries for garnish

Instructions

1. Add cottage cheese to food processor and blend until completely smooth, about 2-3 minutes

2. Add cocoa powder gradually while processing to prevent clumping

3. Pour in maple syrup starting with 2 tablespoons, blend well

4. Add vanilla extract and pinch of salt, process until combined

5. Taste and adjust sweetness with additional maple syrup if needed

6. Add almond butter if using for extra richness, blend until smooth

7. Fold in chocolate chips by hand if using for texture

8. Transfer to serving cups or storage containers

9. Refrigerate for at least 2 hours for best texture

10. Garnish with fresh berries before serving

Notes

Use full-fat cottage cheese for richest, creamiest texture

Blend cottage cheese completely smooth before adding other ingredients

Start with less sweetener and add more to taste preference

Chilling for 2+ hours allows flavors to meld and texture to set

Can be made up to 3 days in advance

Freezes well for up to 1 month in individual portions

Try different extracts like almond or peppermint for variety

Dust with extra cocoa powder before serving for elegant presentation
