Description

Ingredients

1 1/2 cups low-fat cottage cheese

3/4 cup freshly grated Parmesan cheese

3 large garlic cloves, minced

2 tablespoons unsalted butter

1/4 cup whole milk

1/2 teaspoon salt

2 tablespoons fresh basil, chopped

1/4 cup reserved pasta water


Instructions

1. Add cottage cheese, milk, and lemon juice to high-powered blender

2. Blend on high speed for 2-3 minutes until completely smooth

3. Strain mixture through fine-mesh sieve if any lumps remain

4. Melt butter in large skillet over medium-low heat

5. Add minced garlic and sauté for 1 minute until fragrant

6. Pour cottage cheese mixture into skillet with garlic

7. Whisk in Parmesan cheese gradually until melted and smooth

8. Season with salt and pepper, adjusting to taste

9. Add pasta water gradually until desired consistency reached

10. Stir in fresh basil and remove from heat

11. Toss immediately with hot cooked pasta

12. Serve immediately while sauce is warm and creamy

Notes

Use high-quality cottage cheese with fine curds for best texture

Blend thoroughly to eliminate any grittiness

Don’t overheat sauce to prevent separation

Add pasta water gradually – you may not need all of it

Sauce thickens as it cools, so serve immediately
