Description

Amazing carrot ribbon salad inspired by the viral TikTok trend! Fresh carrot ribbons tossed with Asian-inspired dressing, herbs, and sesame seeds. Perfect healthy lunch that’s ready in 15 minutes.


Ingredients

1 pound large carrots, peeled

2 tablespoons soy sauce or tamari

1 tablespoon rice wine vinegar

1 teaspoon sesame oil

2 cloves fresh garlic, minced

3 green onions, chopped

1 teaspoon honey

1/2 teaspoon chili crisp or red pepper flakes

1/4 cup fresh cilantro, chopped

1 tablespoon sesame seeds

Salt to taste


Instructions

1. Wash and peel carrots, then use vegetable peeler to create long ribbons

2. Continue peeling until you have used most of each carrot

3. Place carrot ribbons in large mixing bowl

4. In small bowl, whisk together soy sauce, rice vinegar, and sesame oil

5. Add minced garlic, honey, and chili crisp to dressing

6. Pour dressing over carrot ribbons and toss gently

7. Add chopped green onions and cilantro

8. Massage salad gently with clean hands for 1-2 minutes

9. Let marinate for 30 minutes for best flavor

10. Garnish with sesame seeds before serving

11. Serve chilled or at room temperature

Notes

Use large, straight carrots for best ribbon results

Salad tastes better after marinating 30 minutes to 2 hours
