Ingredients

1/2 cup black sesame seeds

2 cups heavy cream

1 cup whole milk

3/4 cup granulated sugar

6 large egg yolks

1 teaspoon vanilla extract

1/4 teaspoon salt

2 tablespoons honey


Instructions

1. Toast black sesame seeds in dry skillet over medium heat for 3-4 minutes until fragrant

2. Cool completely, then grind in food processor until smooth paste forms, about 8-10 minutes

3. Heat cream and milk in heavy saucepan over medium heat until steaming

4. Whisk egg yolks and sugar until pale and thick, about 3 minutes

5. Slowly pour hot cream mixture into yolks, whisking constantly to prevent curdling

6. Return mixture to saucepan and cook over low heat, stirring constantly until it coats spoon (170°F)

7. Remove from heat and whisk in sesame paste, vanilla, salt, and honey until smooth

8. Strain mixture through fine-mesh sieve into bowl

9. Cover with plastic wrap directly touching surface and refrigerate at least 4 hours

10. Churn in ice cream maker according to manufacturer’s instructions

11. Transfer to airtight container and freeze until firm, at least 4 hours

12. Serve scooped in bowls with additional toasted sesame seeds if desired

Notes

Use hulled black sesame seeds for smoothest texture

Grind sesame seeds until completely smooth to prevent grittiness

Don’t let custard boil or eggs will scramble

Strain mixture to ensure silky smooth texture

Press plastic wrap directly onto custard surface to prevent skin forming

Ice cream will be quite firm when frozen – let soften 5-10 minutes before scooping

Store covered in freezer up to 3 months for best quality
