Ingredients
1 1/2 cups long-grain white rice
2 tablespoons vegetable oil
1 medium yellow onion, diced
3 cloves fresh garlic, minced
1/2 cup tomato sauce
2 1/2 cups chicken broth
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon paprika Salt and pepper to taste
2 tablespoons fresh cilantro, chopped
1 lime, cut into wedges
Instructions
Heat oil in large heavy-bottomed skillet over medium heat
Add rice and toast, stirring constantly, until golden brown (3-4 minutes)
Add diced onion and cook until translucent (2-3 minutes)
Add minced garlic and cook until fragrant (30 seconds)
Stir in tomato sauce, cumin, chili powder, and paprika
Add chicken broth and bring to boil Reduce heat to low, cover tightly, and simmer 18-20 minutes
Remove from heat and let stand 5 minutes without lifting lid
Fluff with fork and season with salt and pepper
Garnish with fresh cilantro and serve with lime wedges
