Description
Complete sheet pan chicken dinner ready in 25 minutes with vegetables all cooked together for easy cleanup
Ingredients
4 boneless, skinless chicken breasts (or 6 thighs)
1.5 lbs baby potatoes, halved
1 large red bell pepper, sliced
1 large yellow bell pepper, sliced
1 medium red onion, sliced
2 cups broccoli florets
1/4 cup olive oil
3 cloves garlic, minced
2 teaspoons dried Italian seasoning
1 teaspoon paprika
1 teaspoon garlic powder
Salt and black pepper to taste
Instructions
Preheat oven to 425°F and line large sheet pan with parchment paper
Cut potatoes in half and toss with 1 tablespoon olive oil, salt, and pepper
Spread potatoes on sheet pan and bake 10 minutes
Meanwhile, season chicken with salt, pepper, Italian seasoning, and paprika
In large bowl, toss peppers, onion, and broccoli with remaining olive oil and garlic
Remove pan from oven, add seasoned chicken and vegetables
Bake additional 20–25 minutes until chicken reaches 165°F internal temperature
Let rest 5 minutes, then serve with fresh lemon wedges
Notes
Use meat thermometer to ensure 165°F internal temperature
Don’t overcrowd pan for proper browning
