Description
Easy Italian pasta salad ready in 20 minutes, perfect for meal prep and quick lunches
Ingredients
1 pound rotini or fusilli pasta
1 cup cherry tomatoes, halved
1 bell pepper, diced
1/2 red onion, thinly sliced
8 oz fresh mozzarella, cubed
4 oz salami, diced
1/2 cup black olives, sliced
3/4 cup Italian dressing
1/4 cup fresh basil, chopped
1/4 cup Parmesan cheese, grated
Salt and pepper to taste
Instructions
Cook pasta until just past al dente according to package directions
Drain and rinse thoroughly with cold water until completely cool
Combine cooled pasta with tomatoes, bell pepper, and onion in large bowl
Add mozzarella, salami, and olives to pasta mixture
Pour Italian dressing over ingredients and toss to coat evenly
Refrigerate at least 30 minutes to allow flavors to meld
Before serving add fresh basil and Parmesan cheese
Season with salt and pepper, toss gently and serve
Notes
Pasta salad improves in flavor after refrigerating overnight
Can be made 3 days ahead – add fresh herbs before serving
