Description

Complete one pot pasta dinner ready in 20 minutes with vegetables, cheese, and minimal cleanup required


Ingredients

Scale

12 oz penne pasta

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 can (14.5 oz) diced tomatoes

2.5 cups vegetable broth

1 cup water

2 teaspoons dried Italian seasoning

1/2 teaspoon red pepper flakes

3 cups fresh spinach

1/2 cup heavy cream

1/2 cup Parmesan cheese, grated

Salt and pepper to taste

Fresh basil for garnish


Instructions

Heat olive oil in large pot over medium-high heat

Add diced onion and cook 3–4 minutes until softened

Add garlic and cook 1 minute until fragrant

Add pasta, diced tomatoes, broth, water, Italian seasoning, and red pepper flakes

Bring to boil, then reduce heat and simmer 12–14 minutes, stirring frequently

Stir in spinach and cook until wilted, about 2 minutes

Remove from heat and stir in heavy cream and Parmesan cheese

Season with salt and pepper to taste

Garnish with fresh basil and serve immediately

Notes

Stir frequently to prevent sticking

Adjust liquid if pasta needs more cooking time

Serve immediately for best texture
