Ingredients
4 boneless, skinless chicken breasts, pounded even
2 tablespoons olive oil
1 medium yellow onion, diced
3 cloves garlic, minced
1/2 cup chicken broth
1 cup heavy cream
2 tablespoons fresh thyme (or 1 tsp dried)
1/4 cup fresh parsley, chopped
2 tablespoons butter Salt and black pepper to taste
1 teaspoon paprika
Instructions
Season chicken breasts with salt, pepper, and paprika on both sides
Heat olive oil in large skillet over medium-high heat
Add chicken and cook 6–7 minutes per side until golden and cooked through
Remove chicken to plate and tent with foil to keep warm
Reduce heat to medium, add onion to same skillet and cook 3–4 minutes
Add garlic and cook 1 minute until fragrant
Pour in chicken broth, scraping up browned bits from pan bottom
Add heavy cream and thyme, simmer 3–4 minutes until slightly thickened
Return chicken to skillet and simmer 2–3 minutes to heat through
Stir in butter and fresh parsley, season with salt and pepper
Serve immediately while hot
