Description

These cinnamon roll pancakes combine fluffy pancake batter with sweet cinnamon swirls and cream cheese glaze for the perfect weekend breakfast that tastes exactly like cinnamon rolls in pancake form.


Ingredients

2 large eggs

1 3/4 cups whole milk

1/4 cup melted butter

For Cinnamon Swirl:

1/4 cup melted butter

1/3 cup brown sugar

1 tablespoon ground cinnamon

For Cream Cheese Glaze:

4 oz cream cheese, softened

1 cup powdered sugar

34 tablespoons milk

1 teaspoon vanilla extract


Instructions

1. Mix flour, sugar, baking powder, and salt in large bowl

2. Whisk eggs, milk, melted butter, and vanilla in separate bowl

3. Combine wet and dry ingredients just until mixed (don’t overmix)

4. For swirl: mix melted butter, brown sugar, and cinnamon until smooth

5. Heat griddle or large skillet over medium heat and lightly grease

6. Pour 1/4 cup batter per pancake onto hot griddle

7. Immediately drizzle cinnamon mixture in concentric circles over wet batter

8. Use toothpick to create spiral patterns from center outward

9. Cook until bubbles form on surface and edges look set, about 3-4 minutes

10. Flip carefully and cook until golden brown, 2-3 minutes more

11. For glaze: beat cream cheese until smooth, add powdered sugar, milk, and vanilla

12. Serve pancakes warm topped with cream cheese glaze

Notes

Don’t overmix batter for fluffiest pancakes

Cinnamon swirl should be slightly cooled but still pourable

Work quickly when creating swirl patterns

Keep cooked pancakes warm in 200°F oven

Leftover pancakes freeze well for up to 2 months
