Restaurant-quality beef stir fry ready in 25 minutes with tender beef, crisp vegetables, and glossy sauce
Ingredients
1 lb sirloin or flank steak, sliced thin against grain
2 tablespoons cornstarch
3 tablespoons vegetable oil
4 cups broccoli florets
1 red bell pepper, sliced
1 small onion, sliced
3 cloves garlic, minced
1 tablespoon fresh ginger, minced
2 green onions, sliced
For the sauce:
1/3 cup low-sodium soy sauce
2 tablespoons oyster sauce
1 tablespoon brown sugar
1 tablespoon rice vinegar
1 teaspoon sesame oil
1 tablespoon cornstarch
2 tablespoons water
Instructions
Toss sliced beef with cornstarch until evenly coated; set aside
Whisk together all sauce ingredients in small bowl; set aside
Heat wok or large skillet over highest heat until smoking
Add 2 tablespoons oil, swirl to coat pan
Add beef and stir-fry 2-3 minutes until just cooked through; remove to plate
Add remaining oil, then garlic and ginger; stir-fry 30 seconds
Add broccoli and bell pepper; stir-fry 3-4 minutes until crisp-tender
Add onion; stir-fry 1-2 minutes
Return beef to pan, add sauce mixture
Stir-fry 1-2 minutes until sauce thickens and coats everything
Garnish with green onions and serve immediately over rice
Notes
Use highest heat possible for best results
Slice beef very thin against grain for tenderness
Serve immediately for best texture
